1) Place the roast in a water bath at 99°C. Turn off the power and cover for 35 minutes. Bring the water to low heat simmering for another 30 minutes until the internal temperature reaches 75°C.
2) Conventional Oven Temperature Set On: 150 °C (≥ 45-60 mins), until herb crust is dried.
